CAJUN STUFFED & ROLLED PORK

We all have a bag of secret dinner party winners that raise the bar whilst actually being super easy to put together. They make us look good, and they satisfy and delight family and friends. We'd like to add this little number to that bag...one which proudly carries the "impress without the stress" tag.

- METHOD -

Set the oven to 180º C. Prepare the stuffing by heating the olive oil in a pan over a medium heat, then adding the chopped onion, pancetta and Cape Herb & Spice Louisiana Cajun Rub Seasoning. Sauté and add the fresh rosemary and sage. Continue to sauté and finally add the breadcrumbs, white wine and smoked paprika to the pan and mix well to combine. Place the pork on a wooden board and season with salt and pepper. Scatter the stuffing evenly over the pork and carefully roll it up tightly. Tie the pork roll with butchers string and cook for at least 3 hours at 180º C.

Remove the strings before slicing and serve with your favourite sides and salads.
