CURRIES OF ORIGIN: DURBAN INDIAN
A strong Indian influence runs down the east coast of South Africa, bringing with it the traditional curries from Durban which are highly sought after for their delicious spiciness and aroma. These curries are made with beef or lamb on the bone.
- METHOD -
Heat the oil in a large pan, then add the peeled onions and sauté until soft and beginning to brown. Next up, add the curry powder spice and sauté, stirring often, for at least 5 minutes. Then add the lamb leg chops (chopped) and then stir to toss in the spices – the lamb should be coated in spices and starting to brown around the edges. Add the chopped tomatoes and sauté until the moisture evaporates and the tomatoes start to break down. Add the cup of beef stock and the peeled and halved potatoes and stir. Season to taste with salt, then simmer with the lid on for 45 minutes, or until the lamb is tender.
Serve with rice and garnish with coriander.
