CURRIES OF ORIGIN: EAST AFRICAN KUKU PAKA
Curry influences are strong throughout East African cuisines, from the Middle East and Arabian Gulf States to India. Our fragrant spice infusion is perfect for creating rich, flavourful curries such as the traditional “Kuku Paka” Kenyan curry.
- METHOD -
Sauté onion and garlic paste in a large pot on medium heat, before adding a generous helping of spice, then add the chicken pieces, the chopped tomatoes or puree and coconut milk.
Reduce heat and cook through – finishing with a handful of fragrantly fresh coriander leaves. This is a perfect illustration of how African, Arabian and Indian influences meld in the coastal region.
