SPICY VEGETABLE COUSCOUS

- WHAT YOU WILL NEED -

  • 1 red onion, sliced
  • 2 cups bell peppers, chopped
  • 2 Tbsp garlic, finely diced
  • 1 Tbsp Tastebud SPICY
  • 2 cups chicken stock, simmering
  • 2 cups couscous
  • 1 cup dried apricots, chopped
  • ½ cup fresh coriander
  • FOR SERVING ~ toasted almonds
  • Olive oil

- METHOD -

In a large pot on medium high heat fry the onion, bell peppers and garlic in a little olive oil. Season with our Cape Herb & Spice SPICY Tastebud Seasoning. Add the hot stock and the couscous. Stir to combine quickly and then put the pot lid on and switch the heat off. After 5 minutes fluff the couscous with a fork. Toss in the chopped apricots and the fresh coriander. Mix well and serve with toasted almond flakes and an extra shake of Cape Herb & Spice SPICY Tastebud.
