THAI 7 GRILLED SNOEK
As the summer months are in full swing and the taste of flavour is in the air, choose Snoek as one of your New Year meals? This is a relatively cheap fish that packs a lot of natural flavour. It’s a quick roast but the result will have your family thinking that you spent much more time whipping it up. Go on then, give it a try!

- METHOD -
Pre-heat your oven to 180˚.
Start off by patting the Snoek dry using a paper towel and slicing it lengthwise if it’s not already sliced. Please the Snoek open on a grill rack and season it lightly with salt and pepper on the inside.
Then season the Snoek with the Cape Herb & Spice Thai 7 Spice and the fish spice leaving a bit for the outside of the fish. Then on the inside, spread the chutney on both sides making sure that you cover the whole surface. Add more chutney if needed.
Pour in 1 tbsp. of olive oil over the Snoek and use your hands to work it in. Layer lemon slices on the one side of the Snoek such that you are able to fold it closed. You should use about 5-8 slices.
Fold the Snoek closed and season the top with the remaining spices. Then massage in the remaining olive oil.
Then grill the Snoek uncovered for 10-15 minutes depending on the size. Make sure you watch the time because it can dry out easily.
For the sauce, combine all the ingredients and heat in a saucepan for 2 minutes. Pour over the fish.
Serve immediately!!!
