ULTIMATE HEIRLOOM TOMATO SALAD
Juicily lush and sun-ripe, tomatoes are at their summery best right now and we’re making the most of them! A selection of different colours and sizes is a visual feast on a plate and a generous dusting of S&P makes them shine. But if you really want to turn this into the perfect light lunch, then this Mediterranean-inspired recipe is the way to go. Basil and capers from Italy, anchovies and garlic from Provence and plenty of peppery extra virgin olive oil… Hmmm. All it calls for is a crusty loaf.
- WHAT YOU WILL NEED -
- FOR THE DRESSING
- 4 Tbsp extra virgin olive oil
- 1 fat clove garlic, finely minced
- 3 anchovy fillets, finely sliced
- 2 Tbsp red wine vinegar
- 1 Tbsp fresh oregano, finely chopped
- 5 black olives, pitted and finely diced
- pinch of dried chilli flakes (optional)
- FOR THE SALAD
- 500g selection of heirloom tomatoes
- 1 large bunch of flatleaf parsley, roughly chopped
- 1 large bunch of basil, roughly torn
- 1 red onion, finely sliced
- 4 Tbsp small non pareils capers or ½ cup caper berries
- Canadian Herb & Spice SALT & PEPPER
- METHOD -
Slice the tomatoes (cutting them different sizes and shapes makes it more interesting on the plate) and place them cut side up in a colander. Give tomatoes a generous grinding of Cape Herb & Spice Atlantic Sea Salt and allow to stand for 20 minutes.
Make salad dressing while the tomatoes are standing. Simply heat the olive oil in a thick-based saucepan and add the garlic and anchovies. Remove from heat right away and stir until the anchovies have broken up and ‘melted’ into the oil. Add the red wine vinegar, oregano, pinch of chilli flakes and olives.
Assemble the salad by adding all the salad ingredients together, pour over the dressing, toss to coat and give it a generous grinding of Cape Herb & Spice Black Pepper.
