CHRISTMAS SALAD 3 - WATERMELON, CUCUMBER AND FETA SALAD
Nothing like the freshness and sweetness of a waterlmelon, feta and cucumber salad, during the warm summer months.
- METHOD -
Start off by slicing the celery into very thin strips (a julienne peeler makes this easy) and place strips in cold water for a few minutes. Then slice watermelon and cucumber any way you like – we used an old-fashioned melon baller to make watermelon ‘baubles’ for our wreath and a cookie cutter to make watermelon and cucumber stars.
Next, pat dry celery and shape a ring of celery on the rim of a large round plate (think of it as the ‘moss’ for your wreath). Crumble over feta, then build your wreath with your baubles and stars. Drizzle over balsamic glaze, give it a generous grinding of black pepper. Artfully place small rocket leaves, pop on the caper berries and you’re done. Merry Christmas!
