EASY CHRISTMAS SIDES 2 OF 3: BROCCOLI & BACON SALAD

Fresh, healthy, tasty and incredibly easy – that’s the way we’re going with our Christmas sides this year. The secret to elevating it to festive food? It’s all in the spice!

- METHOD -

Boil or steam the broccoli until just done – you want some al dente crunch still. Refresh the broccoli in ice water, then drain and set aside. Fry the bacon in olive oil until very crispy, then drain on a paper towel. Plate up the broccoli and scatter over bacon, almonds and crispy onion bits. Mix together the dressing ingredients and it’s time to tuck in.

(Cook’s tip: Crispy onion bits for salads are readily available in many big supermarkets, but you could also easily make your own. Simply slice a white onion very finely and separate all the layers so you have individual thin onion slivers. Dust lightly with plain flour and pop the onion slivers into hot vegetable oil to fry for a few seconds until crisp and golden. Drain on a paper towel.)
